CHICKEN CHÈVRE SANDWICH
Kycklingsandwich med getost

A really rich sandwich with fried chicken, aubergine/eggplant and mango. Some goat's cheese on top does the trick to the full!

4 slices sourdough bread
2 chicken fillets
salt, pepper
rapeseed oil for frying
1 tablespoon curry
1 small aubergine
olive oil for frying
1 ripe mango
5½ oz chèvre (goat's cheese)
1 red chili fruit
some rocket leaves
2 to 3 tablespoons "runny" honey

For serving:
mango chutney


Toast the bread on both sides and heat the oven to 440F.

Thinly slice the chicken and flavor with salt and pepper. Fry the meat in the rapeseed oil for 1 to 2 minutes on each side and flavor with some curry. Take it up and rinse the pan. Slice the aubergine and fry until golden in the olive oil. Flavor with some salt. Cut the mango in pieces, cut the chèvre in pieces and thinly slice the chili.

Put some rocket leaves on each slice of bread. Alternate chicken fillet, aubergine slices, chili and mango, put a few pieces of chèvre on top and drizzle with some honey. Put in the oven for about 10 minutes and serve with mango chutney.
