Fillet of Pork in a Hot Curry Sauce - Fläskfilé i het currysås

FILLET OF PORK IN A HOT CURRY SAUCE
Fläskfilé i het currysås

Serves 4

14 oz fillet of pork, sliced
2 onions, sliced
2 apples, grated
2 bananas, sliced
1 to 2 tablespoons curry
4 garlic cloves
3 tablespoons oil
2 tablespoons Chinese soy sauce
2 tablespoons mango chutney
0.8 cup water + 1 bouillon cube (I use chicken)
0.4 cup heavy cream


Sauté the onions lightly with curry and crushed garlic. N.B. This sauce is supposed to be rather strong, so you'll need at least 1 tablespoon curry as the fruit will take away some of the heat.

Add apples, banana, soy sauce, mango chutney and bouillon and simmer slowly, covered, for about 10 minutes. Brown the meat, add it to the sauce and boil for 3 to 4 minutes. Pour in the cream and flavor to taste.

Serve with boiled rice and some more mango chutney.
