FISH PATTIES
Fiskfärsbiffar
Make fish patties and flavor them with fresh green herbs, then serve them with a home-made remoulade sauce.
Serves 4
Approx 2 lbs fillets of cod, haddock or hoki
2 tablespoons Maizena
½ teaspoon salt
some black pepper
1 tablespoon chopped parsley
1 tablespoon finely chopped chives
some flour
2 to 3 tablespoons butter or margarine
Decoration:
lemon slices
Remoulade sauce:
0.6 cup soured Cream
0.6 cup crème fraîche
1 tablespoon chopped parsley
2 tablespoons chopped pickled gherkin
1/4 to ½ teaspoon curry
½ teaspoon salt
white pepper if needed
Grind the fish in a grinder or a mixer and add Maizena, salt and black pepper. Last add the green herbs and work the batter together. Shape into 8 round, even balls and put them on a floured carving board. Gently flatten them out to patties and dust with some extra flour.
Brown the fat in a frying pan and fry a couple of patties at a time until golden on both sides, about 10 minutes.
Make the sauce by quickly mixing the ingredients in a bowl and flavoring it well.
Put the fish patties on a warm serving plate and decorate with sliced lemon. Serve with boiled potatoes, boiled vegetables and the remoulade sauce.
