EGG WHITE CAKE

Sometimes you have leftover egg whites in the fridge. If you don't want to make meringues, you can use them in this lovely egg white cake with lots of almonds. A cup of coffee often tastes better with a slice of cake and this one can also be used as a base for different desserts.
Makes 1 cake in a 6-cup cake pan
4½ oz butter or margarine
1 cup sugar
4½ oz almonds
0.8 cup flour
½ teaspoon baking powder
7 egg whites, approx 0.7 cup
Stir fat and sugar until smooth. Grind the almonds. Mix almonds, flour and baking powder and stir this into the butter sugar mixture. Beat the egg whites until stiff and gently turn them into the batter.
Pour in a greased baking pan and bake at 350F for about 50 minutes. Try with a cake tester. Unmould the cake and allow to cool under the pan.
