This delicious fish gratin is generally appreciated even by the youngest members of the family, who might be very suspicious as soon as they hear the word "fish".
Serves 6
1 1/3 lbs fresh cod fillets or
corresponding amount frozen cod
1 bunch dill
salt
2 tablespoons fresh lemon juice
long-grained rice, enough for 6 people
water, salt
Stew:
2 tablespoons butter or margarine
10½ oz fresh mushrooms
1½ tablespoons flour
1.2 cup cream, 15% fat or the like
salt, pepper
4 tomatoes
0.4 cup good, ripe, grated cheese
Boil the rice in salted water.
Put the fish fillets in a large, greased, oven-proof pan. Flavor lightly with salt and drizzle with the lemon juice. Cover with aluminum foil and put it in the oven at 390F for about 10 minutes, so the fish is just barely cooked. Take up the fish and put the boiled rice in the bottom of the pan, then put the fish back on top of the rice. Sprinkle with chopped dill.
Make the stew. Clean and slice the mushrooms and sauté it in fat in a frying pan until tender and golden. Sprinkle with flour, dilute with cream and let it all simmer for about 5 minutes. Flavor to taste with salt and pepper and pour the mushroom stew over the fish.
Slice the tomatoes and distribute them over the Surface. Sprinkle with grated cheese and bake in the oven at 390F for about 10 minutes or until nicely colored.
