These cookies are classics. In earlier days they were a must on the coffee table (in Sweden it was almost a duty to serve seven kinds of cookies with coffee when there was a special occasion or just the weekend). We still love cookies in Sweden, but nowadays it's definitely not necessary with seven kinds even though I could very well eat it …
Makes approx 45 cookies
1 3/4 oz almonds
5 bitter almonds
7 oz butter or margarine
0.2 cup sugar
1.6 cup flour
For brushing:
1 beaten egg
Decoration:
chopped almonds
crushed loaf sugar
Scald and skin the almonds and grind them or put them in the mixer. Mix almonds, butter, sugar and flour. Quickly work to a dough and store cold, preferably overnight.
Roll out the dough to "sausages" that you cut in 2 inch long pieces. Brush the cookies with beaten egg and sprinkle with chopped almonds and loaf sugar. Bake at 350F for 10 to 12 minutes or until nicely colored and done. Allow to cool for a while on the baking plate.
