PORTER BEEF STEW

This dish is extra hearty and rich in taste thanks to the porter. A good all-in-one dish that really only needs a salad.
1 lb 10 oz boneless beef. e.g. shoulder
or the outside of the thigh (don't know the name)
2 tablespoons butter or margarine
salt, pepper
2 lbs potatoes, 10 to 12
approx 20 pickled onions
2 tablespoons Chinese soy sauce
1 bottle of porter, approx 1.3 cups
0.8 cup bouillon
1 bunch chives
Cut the meat in pieces. Brown in the fat in a saucepan and flavor with salt and pepper. Peel and slice the potatoes and add them to the pot together with the pickled onions. Add soy sauce, porter and bouillon enough to cover the meat and potatoes in the pot.
Put a lid on and simmer slowly for about 1½ hours or until the meat is really tender. Flavor to taste and adjust if necessary. Chop the chives and sprinkle it over the surface just before serving.
