CHICKEN STEW WITH BACON
Kycklinggryta med bacon
One chicken is more than enough for 4 people if you make a stew with bacon, mushrooms and onions, like this one. If you choose hen instead (hens for boiling have recently come back on the market in Sweden which I vividly applaud) you have to boil it for a bit longer.
Serves 4
1 chicken, approx 2 lbs
3½ oz bacon
1 can mushrooms, 7 oz, or corresponding
weight in fresh mushrooms (which I prefer)
4 to 6 small onions
1 tablespoon butter or margarine
1 to 1½ teaspoons salt
some white or black pepper
1 bay leaf
1 crushed garlic clove
1.2 cup red wine or bouillon + mushroom liquid
Cut up the chicken in serving-sized pieces. Shred the bacon, slice the mushrooms and peel the onions. Brown the chicken in the fat in a frying pan and transfer to a pot. Brown bacon, onions and mushrooms and transfer it all to the pot. Add salt, Spices, garlic and wine or bouillon + mushroom liquid. Cover with a lid and let it all simmer on low heat for about 25 minutes. Flavor with more salt and pepper if needed.
If you use bouillon, you can add a few tablespoons of tomato paste.
