Fillet of Pork with Cheese Sticks - Fläskfilé med oststavar (retro)

FILLET OF PORK WITH CHEESE STICKS
Fläskfilé med oststavar

Serves 4

1 large or 2 smaller pork fillets
salt, paprika
3½ oz mild cheese
1 tablespoon flour
1 3/4 to 2½ oz butter or margarine
1 small onion
2 tablespoon finely chopped parsley
2 oz tomato paste
0.8 cup soured cream


Trim the pork fillets well and rub them with ½ teaspoon salt and 1 teaspoon paprika. Cut the cheese in small sticks, approx 1½ inches long. Stick them into the meat on all sides with the help of a small, pointy, sharp knife. Let a piece stick out from the meat.

Sprinkle the meat with a thin layer of flour and Brown well in a rather deep pot. Add finely chopped parsley, chopped onions, tomato paste and soured cream and let simmer, covered, on low heat until the meat is done through and tender. Flavor the pan juices to taste.

Serve with potatoes and some boiled vegetables (sprouts is almost never wrong).
