DELICIOUS CHEESE SALAD
Läcker ostsallad
The scrumptious cheese salad with several kinds of cheese is very good with tomato soup and a piece of a little rougher bread.
Serves 4
4½ oz Emmenthaler cheese or some similar kind
(in Sweden we have a cheese called Grevé which is similar)
4½ oz mozzarella
1 3/4 oz ripe cheese, e.g. Cheddar or the Swedish Svecia
3 to 4 celery stems
1 bell pepper
approx 0.4 cup mayonnaise
4 teaspoons fresh lemon juice
4 tablespoons finely chopped chives
tabasco
salt
lettuce leaves
3 tomatoes
Dice the different cheeses. Rinse, trim and finely cut the celery. Rinse, trim and shred the bell pepper, then mix cheese, celery and pepper.
Mix mayonnaise with lemon juice, chives and a drop or two of tabasco. Flavor to taste with salt. Rinse lettuce leaves and tomatoes and slice the tomatoes. Put lettuce leaves and tomato slices on a plate, add the cheese mix and pour the mayonnaise on top.
Store the salad cold about an hour before serving.
