NUT GINGER COOKIES
Nöt- och ingefärskakor

These cookies has a delicious taste of ginger and nuts. They're easy to make, you can keep the dough in the fridge and bake as many cookies as you wish at a time. They're best with tea but are also good with coffee and lemonade.

Makes approx 60 cookies

9 oz butter or margarine
1 tablespoon treacle/molasses
0.4 cup sugar
1½ teaspoon ground ginger
0.4 cup chopped nuts (hazelnuts, walnuts, pecans)
2.4 cups flour
1 teaspoon baking powder
1 egg


Start with stirring the fat until smooth. Add treacle and sugar and stir until the batter is light and porous. Add ginger and nuts and blend well. Mix flour and baking powder. Stir the egg into the butter mixture, then add the flour mixture and quickly work the dough together.

Shape the dough into two "sausages", approx 12 inches long and almost 2 inches in diameter. Wrap them up in plastic foil and store cold for a couple of hours or overnight until baking.

Cut each roll in approx 30 slices and put them on greased or paper-lined baking plates. Bake the cookies on the middle shelf of the oven at 390F for about 10 minutes or until lightly colored and done.
