Kassler Chops with Tomato Sauce - Kassler med tomatsås

KASSLER CHOPS WITH TOMATO SAUCE,
RAW-FRIED POTATOES AND SPROUTS
Kassler med tomatsås, råstekt potatis och brysselkål

Kassler (see one of my information text posts in the blog) is impossible to do wrong. Nowadays they don't sell bone-in kassler anymore in Sweden unless you buy it from a butcher, but this dish is just as good with boneless meat. You can grill it or fry it or bake it in the oven with a good sauce and it's always delicious and easy to make. If you serve it with some classier accompaniments it's excellent as a festive dish as well.

Serves 4

4 slices kassler, bone-in if you can find it, in all 14 oz to 1 lb
(it's basically warm smoke-cured loin of pork)

Sauce:
1 tablespoon butter or margarine
1 tablespoon tomato paste
1 teaspoon paprika
0.8 cup meat bouillon

For serving:
raw-fried potatoes
boiled sprouts


Fry the meat for a couple of minutes on each side in some fat, or grill them.

Quickly sizzle fat, tomato paste and paprika, dilute with bouillon and bring the sauce to a boil. Serve the chops with the sauce, raw-fried potatoes and sprouts. And believe me, this is so good, so simple and quick.
