Mossi's Fillet of Pork - Mossis fläskfilé

MOSSI'S FILLET OF PORK
Mossis fläskfilé

This dish is easy to make, can be made in advance and, not least, is delicious. 

Serves 4

1 to 1 1/3 lbs fillet of pork
2 tablespoons butter or margarine
salt, white pepper
2 tablespoons flour
approx 0.8 cup heavy cream
approx 0.8 cup dry white wine
2½ oz cheese, well-ripe and strong
Chinese soy sauce


Fry the meat whole by first browning the fat in a frying pan and then brown the fillet all around. Flavor with salt and pepper and then fry on low heat, covered, for about 10 minutes.

Take up the meat and stir the pan juices with some flour. Dilute with cream and wine and let the sauce boil a couple of minutes. Add cheese, cut in pieces, and let it melt in the sauce which must not boil anymore afterwards. Flavor to taste and adjust with salt, pepper and some soy sauce.

Cut the meat in approx 3/4 inch thick slices and put them on an oven-proof dish. Pour the sauce on top and bake at 480F until the cover is colored.

Serve with boiled rice or potatoes and a green salad.
