FRIED BALTIC HERRING WITH CURRY SAUCE
Stekt strömming med currysås
Crispy fried Baltic herring is delicious and cheap. A sauce with soured cream, flavored with curry, plus fried onions completes the dish.
Serves 4
2 lbs fresh Baltic herring (whole fish)
or 1 1/3 lbs herring fillets
1½ teaspoons salt
white pepper
2 tablespoons finely chopped dill
0.4 cup rye flour
For frying:
butter or margarine
Curry sauce:
0.8 cup soured cream
½ teaspoon salt
2 teaspoons curry
2 tablespoons grated onion
1 teaspoon lemon juice
2 to 3 onions
butter or margarine
2 tablespoons water
1 teaspoon brown sugar (optional)
Trim, rinse and fillet the herring if you use whole fish.
Cover a carving board with baking paper. Put half of the herring fillets on it, skinside down. Flavor with salt and white pepper and sprinkle some fresh, chopped dill on each. Put on remaining fish. Fold the whole "packages" in rye flour and fry them on both sides on low heat in a frying pan until done. Put them on a warm plate and keep warm.
Peel and slice the onions and Brown it in remaining fat. Add water and some brown sugar if you wish. Fry for a couple of minutes until tender.
Mix the ingredients for the sauce and flavor it well.
Serve with boiled potatoes and vegetables of your choice.
