FRENCH PORK CHOPS WITH TOMATO SALAD
Franska kotletter med tomatsallad
The mustard/garlic combo lends this lovely dish a French taste.
Serves 4
1 1/3 lbs boneless loin of pork
butter or margarine
salt, freshly ground black pepper
Sauce:
0.8 cup low-fat crème fraîche
0.2 cup dry white wine
1 tablespoon mustard, preferably Dijon
1 garlic clove
0.2 cup chopped leafy parsley
For serving:
2 lbs potatoes
4 tomatoes
Peel the potatoes and cut it in pieces. Boil until tender in lightly salted water for about 10 minutes.
Cut the meat in 4 slices. Flavor with 1 teaspoon salt and some black pepper and fry in some fat in a frying pan for about 2 minutes on each side. Take them up and put them on a plate.
Sauce:
Rinse the frying pan, pour in the crème fraîche and add wine, mustard, crushed garlic and parsley. Bring to a boil while stirring. Put in the pork chops with their meat juices and let them boil in the sauce for 2 to 3 minutes.
Pour off the water from the potatoes and rice it (if you wish). Slice the tomatoes and flavor with some salt and black pepper and serve the pork chops with sauce, potatoes and tomato salad.
