CURRY FISH IN THE OVEN
Curryfisk i ugn

This is quick, easy and delicious. Put large, evenly thick slices of cod in an oven-proof pan and cook it with some curry. You make the sauce from the pan juices.

Serves 4

4 large slices fresh cod, approx 2 lbs in all
2 tablespoons butter or margarine
½ teaspoon salt
½ teaspoon curry
approx 0.6 cup water
1 bay leaf

Sauce:
2 tablespoons finely chopped onion or shallot
1 tablespoon butter or margarine
1 teaspoon curry
2 tablespoons flour
approx 0.8 cup pan juices
approx 0.8 cup cream, 15% fat or the like
salt if needed

4 green bell pepper rings


Quickly rinse the sliced fish. Grease an oven-proof pan and put the fish in. Mix salt and curry and sprinkle it over the fish. Add remaining fat in dabs. Pour on water and add the bay leaf. Cover the pan with aluminum foil and cook the fish in the oven, starting at 350F, for about 15 minutes. Increase the heat to 390F and continue cooking for about 10 minutes or until milky white and firm. The time in the oven depends on how thick the slices are.

Gently pour off the pan juices to use for the sauce and keep the fish warm while making the sauce.

Sauté the oni0ns in a saucepan, sprinkle with curry and let it sizzle for a few minutes. Dust in the flour and stir. Dilute with the warm pan juices and cream, little by little, to a smooth sauce. Let simmer for about 5 minutes and flavor the sauce.

Take out the fish and put on the bell pepper rings. Serve right away with the sauce and boiled potatoes.
