YOGURT-MARINATED BEEF

In the olden days it was common to tenderize meat in sour milk. Here I have modernized this method and used yogurt instead, which makes the meat really tender and delicious.
4 servings
1 1/3 lbs boneless beef, e.g. beef knuckle
or top side
0.6 cup plain yogurt
1 teaspoon salt
½ teaspoon ginger
½ teaspoon nutmeg
some ground cloves
1 tablespoon butter or margarine
0.4 cup water
0.2 cup milk
½ to 1 teaspoon Chinese soy sauce
Trim and slice the meat. Put it in a bowl, pour on the yogurt and marinate for 8 to 10 hours.
Take up and drain the meat. Wipe it carefully and save the marinade. Mix salt and Spices and sprinkle this over the sliced meat. Gently brown them on both sides in some fat in a frying pot. Not too much heat, because the meat easily sticks to the pan with this marinade.
Lower the heat even more and add water, milk and soy sauce. Cook slowly on low heat, covered, for about 20 minutes or until the meat is tender. Add the yogurt marinade and let it all heat through, but not boil.
Serve with potatoes or rice and a salad.
