Ground Meat Rolls with Bacon and Tomatoes - Färs- och baconrullar med tomat

GROUND MEAT ROLLS WITH
BACON AND TOMATOES
Färs- och baconrullar med tomat

Serves 4

Approx 1 lb ground meat (50/50 beef/pork)
5 oz bacon
salt, black pepper
1 can whole tomatoes, approx 14 oz
1 tablespoon tomato paste
1 large onion
1 mozzarella cheese ball
2 to 3 parsley sprigs


Heat the oven to 440F.

Split the bacon in two. Shape the meat to larger meatballs and wrap each in ½ slice bacon. Flavor with some salt and black pepper.

Pour the tomatoes in a saucepan and add tomato paste. Bring to a boil and flavor to taste with salt and pepper. Cut the onion in rather large dice and add them to the tomatoes. Pour the sauce in an oven-proof pan and put the bacon rolls in the sauce.

Grate the mozzarella and distribute it on top. Cook in the oven for about 20 minutes. Chop the parsley and sprinkle it over the surface and serve with a salad.
