COD IN THE OVEN
Torsk i ugn

Cooking in the oven is very convenient and oven dishes are juicy and delicious. I make this from frozen cod fillets, that just need to thaw enough to be cut in pieces before putting it in the oven.

Serves 4

Approx 1 1/3 lbs frozen cod fillets
2 teaspoons salt
½ teaspoon white pepper or lemon pepper
fresh juice from 1 lemon
0.2 cup water
dill
2 tablespoons butter

Sauce:
approx 0.8 cup soured cream
4 tablespoons finely chopped dill
some spice salt


Thaw the fish enough to be able to cut it in 4 pieces. Rub it with salt and pepper. Transfer the fish to a greased, oven-proof pan, drizzle with lemon juice and pour on the water. Put dill stems on and around the fish and add the butter in dabs.

Put the pan in the oven at 350F and cover with a piece of baking paper or aluminum foil. Let simmer in the oven for about 45 minutes.

Meanwhile, blend the sauce together. Do not stir the soured cream too much. Take out the fish and remove the dill stems. Sprinkle with some fresh dill.

Serve with the sauce and boiled or mashed potatoes and some grated root vegetables.
