MELON SALAD WITH FETA AND STRAWBERRIES
Melonsallad med fetaost och jordgubbar
Serves 4
Approx 9 oz melon, e.g. cantaloupe
1 cup strawberries
½ cucumber
½ head of romaine salad
1 3/4 oz rocket leaves
approx 0.4 cup roasted, coarsely chopped walnuts
5½ oz feta cheese
For serving:
crema di balsamico
bread
Cut the melon pulp in smaller pieces and split the strawberries if they're large. Peel the cucumber and split it in two. Scrape out the seeds and cut the cucumber in pieces. Roughly cut up the romaine salad. Gently mix all ingredients for the salad and put in a serving bowl.
Serve with crema di balsamico for each person to drizzle over their salad. A piece of bread is good to serve with it.
