MAJ'S DELICIOUS SATURDAY SOUP
Majs goda lördagssoppa
This kind of soup can either be served as an entrée in small servings, but is also good as a main course.
4 servings
1 large chicken, approx 2 lbs 7 oz
water, salt, white peppercorns
2 whole allspice berries
1 bay leaf
1 carrot in pieces
1 leek in pieces
Soup:
the bouillon from boiling the chicken
2 sliced leeks
1 shredded red bell pepper
chopped parsley
Thickening:
1 egg yolk
0.4 cup heavy cream
Boil the chicken in water with spices and veggies for 45 to 60 minutes. Take it up and let cool slightly. Strain the bouillon and pour it back in the cleaned saucepan.
Trim and de-bone the chicken and cut half of the meat in shreds or pieces (save remaining chicken for another meal, like a stew or a risotto). Add leek and bell pepper to the soup and boil for about 5 minutes or until the vegetables are tender. Add the chicken meat.
Stir the egg yolk with the cream and beat this thickening into the soup. Sprinkle with parsley.
