BROCCOLI SOUP WITH HAM
Broccolisoppa med skinka
Serves 4 to 6
Olive oil
3½ oz shredded ham
2 chopped onions
1 crushed garlic clove
1 lb broccoli (finely chopped stems,
coarsley chopped florets)
grated nutmeg
2.4 cups chicken bouillon
½ cup crème fraîche
salt, pepper
Heat the oil on medium heat in a saucepan. Sauté the ham in the oil while stirring until slightly colored. Reserve a few shreds for decoration. Add onions and garlic and lower the heat. Sauté for 10 minutes or until the onions are tender. Add broccoli stems and nutmeg and pour in enough bouillon to cover. Bring to a boil and simmer for 10 minutes until the broccoli is tender.
Add the florets, cover with a lid and simmer for 8 to 10 minutes until the florets are tender but still bright green. Remove from heat, add crème fraîche and mix the soup until smooth. Flavor to taste with salt and pepper.
Serve the soup in bowls and decorate with shredded ham, crème fraîche, olive oil and bread.
