Spaghetti with Mushroom Mix - Spaghetti med svampröra

SPAGHETTI WITH MUSHROOM MIX
Spaghetti med svampröra

This is best with fresh mushrooms. You can use chanterelles, mushrooms or a mix. Instead of pasta, you can serve the mix with rice or mashed potatoes.

Serves 4

Approx 7 oz spaghetti
water, salt
1 small onion
10½ oz fresh mushrooms as above
4 tomatoes
3 tablespoons oil
1 teaspoon salt
some black pepper
1 teaspoon basil
2 tablespoons finely chopped chives


Boil the pasta in lightly salted water.

Meanwhile, make the mushroom mix. Peel and chop the onion. Trim the mushrooms and cut it in pieces. Rinse the tomatoes and cut them in wedges. Sauté the onion without browning in some oil in a frying pan. Add mushrooms and tomato wedges and fry on low heat for about 5 minutes. Flavor with salt, pepper and basil.

Sprinkle with chives and serve the mushroom mix with the spaghetti. You can also fill crêpes or omelets with it, it's delicious.
