MEAT AND POTATO PUDDING
Kött- och potatispudding
This is a good, sturdy dish that is normally very well-liked, not least by children. I have also mixed spinach into the mashed potatoes, thus making it even better.
Serves 4
2 lbs potatoes
water, salt
approx 1.2 cup milk
1 teaspoon salt
some white pepper
approx 3½ oz frozen spinach
Filling:
8.8 oz ground meat, 50/50 beef/pork
1 tablespoon butter or margarine
1 finely shredded leek
1 finely chopped onion
½ teaspoon salt
some white pepper
0.4 cup grated cheese
Peel the potatoes and cut it in wedges. Boil until just tender in salted water, 15 to 20 minutes. Meanwhile, brown the ground meat in some fat in a frying pan. Mash it with a fork while browning. Add leek and chopped onion and let this sizzle with the ground meat for 5 to 7 minutes. It mustn't get brown, just soften up. Flavor.
Heat up the milk. Pour off the potato water and mash or rice the potatoes until smooth. Dilute with the hot milk and stir until fluffy and airy. Flavor, add spinach and stir well.
Spread out half of the mashed potatoes in a greased oven-proof pan and put the ground meat mixture on top. Cover with remaining mashed potatoes, sprinkle with grated cheese and bake in the oven at 350F. After 15 minutes, increase the heat to 390F and bake until the surface is golden and everything is heated through.
Serve with lingonberry or cranberry jam and grated carrots.
