Minute Steaks with Spicy Butter and Potato Wedges - Lövbiff med aromsmör och potatisklyftor

MINUTE STEAKS WITH SPICY BUTTER
AND POTATO WEDGES
Lövbiff med aromsmör och potatisklyftor

Serves 4

1 1/3 lbs minute steaks
salt, pepper
1 lb 12 oz potatoes
2 to 3 tablespoons olive oil
butter for frying
1.2 cup hearty veal bouillon

Spicy butter:
½ garlic clove
2½ oz room-tempered butter
1 tablespoon finely chopped parsley
grated zest from ½ lime

For serving:
tomato salad


Heat the oven to 390F.

Cut each meat slice in 2 and flavor with salt and pepper. Cut the potatoes in wedges and put them in an greased, oven-proof pan. Drizzle with olive oil, flavor with salt and pepper and put in the oven for about 35 minutes.

Spicy butter:
Crush the garlic into the butter and work in the other ingredients. 

Start with the meat when the potatoes are almost ready. Heat up the butter in a frying pan and fry the meat on high heat for 1 minute on one side and 30 seconds on the other side. Pour the bouillon in the pan and boil a Little.

Serve immediately with the butter, the oven-baked potatoes, the pan juices and a simple tomato salad.
