Cheese and Onion Pie - Ostpaj med lök

CHEESE AND ONION PIE
Ostpaj med lök

There are many different kinds of cheese pies. This is a rather unusual one since you simmer the onion filling before putting it in the pie. With a salad and a glass of red wine it's a nice evening or lunch dish, and it really is delicious. 

Serves 4 to 6

1.4 cup flour
½ teaspoon salt
3½ oz butter or margarine
3 tablespoons cold water

Filling:
approx 0.4 cup flour
1.6 cup milk
0.2 cup finely chopped onion
3 eggs
7 oz grated cheese, of a good strong kind
0.8 cup soured Cream
½ teaspoon salt
some grated nutmeg (not for me)


Chop together flour, salt and fat, add the water and quickly work to a dough. Store cold for at least 1 hour.

Make the filling: Beat flour and milk in a saucepan and let simmer while beating. Add onion and simmer this on low heat for about 5 minutes. Allow to cool. Beat the eggs, then stir them into the onion mixture together with grated cheese and soured cream. Flavor with salt and nutmeg.

Dress a pie pan, preferably of the springform type, Bake for about 10 minutes at 390F. Pour in the filling and continue baking for 25 to 30 minutes or until colored and seems done.

If you make the dough one day in advance, it will be especially brittle and nice when baked.

Serve with a green salad or a tomato salad.
