Vegetarian Goulash - Vegetarisk gulasch

VEGETARIAN GOULASH
Vegetarisk gulasch

Serves 4

2 carrots
approx 2½ oz celeriac (celery root)
1 onion
2 garlic cloves
7 oz quorn 
oil for frying
1 tablespoon paprika
1 tsp caraway
1.2 cup tomato juice
4 cups vegetable bouillon
salt, pepper
½ bunch parsley


Slice the carrots and dice the celery root. Chop onion and garlic. Fry the quorn in some oil in a pot until nicely colored. Let carrots, celery root, onion and garlic sauté with the quorn for a few minutes.  Dust with paprika and add caraway, tomato juice and bouillon. Let the stew boil for 20 minutes and flavor with salt and pepper.

Chop the parsley, stir it into the pot and serve with bread.
