GRANDMA'S SAND CAKE
Mormors sandkaka
The potato starch in this cake has given it the name. The texture is a little "sandy" but it's a lovely cake that keeps for a long time, and it's full of tradition.
Makes 1 cake in a 6-cake pan
7 oz butter or margarine
1 cup sugar
1 cup flour
0.4 cup potato starch
1½ teaspoon baking powder
4 eggs
grated zest from ½ lemon or 2 tablespoons brandy
powdered sugar (optional)
Start with greasing the cake pan and heat the oven to 350F.
Stir fat and sugar until light and very fluffy. Mix the flour, potato starch and baking powder well. Stir in the eggs, one by one, in the butter-sugar mixture. Beat everything for a little while longer, then flavor with lemon zest or brandy. Stir in the flour mixture. The batter will be rather thick.
Pour the batter in the cake pan and even it out on the Surface with a spatula. Bake in the lower part of the oven for about 1 hour or until lightly colored and done. Try with a cake tester.
Gently loosen the cake from the pan and allow to cool slightly. Gently unmould the cake on a rack and let cool completely under a cloth. Dust with some powdered sugar if you wish.
