PORK CHOPS WITH A DELICIOUS TOMATO SAUCE
Kotlett med läcker tomatsås
This is a lovely way to serve the pork chops - with a generous cover of tomato sauce. Remember to fry the meat on moderate heat or they might go dry on you.
Serves 4
4 bone-in pork chops, in all approx 1 1/3 lbs
2 tablespoons butter, margarine or oil
salt, black pepper
Tomato sauce:
1½ onions
2 garlic cloves
0.2 cup olive oil
1 can crushed tomatoes, approx 14 oz
approx 2½ oz tomato paste
1 tablespoon vinegar
a very small amount of powdered mustard
½ tablespoon sugar
salt, powdered chili
Start with the sauce. Peel and chop onions and garlic. Heat the oil in a saucepan and let the onions simmer in the oil until glossy and transparent. Add the crushed tomatoes and tomato paste. Add vinegar, powdered mustard, sugar,salt and the tiniest amount of powdered chili. Let the sauce simmer until thick, approx 30 minutes.
When 10 minutes remain for the sauce, heat up a grill pan. Brush the pork chops with oil and grill for 5 minutes on each side (or fry them in an ordinary frying pan). Flavor when done.
Serve the chops covered by piping hot tomato sauce, mashed potatoes and a salad.
