SPANISH FISH
Spansk fiskrätt

You can make it all in the same pan in the oven and then put it straight on the table. It's convenient and practical. The fish get that Spanish flavor from onions, olives, parsley and capers.

Serves 4

1 1/3 to 1½ lbs fillet of fish, e.g. plaice,
cod or haddock
3 tablespoons fresh lemon juice
1 large onion
2 garlic cloves
15 to 20 green, pimiento-filled olives
2 tablespoons butter or margarine
3 tablespoons finely chopped parsley
1 tablespoon capers
½ teaspoon oregano


Quickly rinse the fish and put it on a plate. Drizzle with the lemon juice and marinate the fish for about 30 minutes. Meanwhile, peel and slice the onion and crush the garlic. Slice the olives. Sauté the onion in the fat on low heat, it must not be Brown. Add garlic, olives, parsley, capers and oregano.

Fold the fillets and put them in a greased, oven-proof pan. Pour the onion-olive mixture on top and cover with aluminium foil. Cook in the oven at 350F for About 20 minutes or until the fish is White and firm and appears done.

Serve with rice or potatoes and a tomato and onion salad.
