HONEY BREAD
Honungsbröd
Honey is good for baking. This bread is rather light in color and is excellent for toasting.
Makes 2 breads in 6-cup bread pans
1 3/4 oz active compressed yeast
2 cups water
0.4 cup honey
1 tablespoon butter or margarine
½ tablespoon aniseed
½ tablespoon salt
approx 6 cups sifted rye flour
For brushing:
melted butter or margarine
Crumble the yeast in a mixing bowl. Heat water, honey, fat, aniseed and salt to body heat. Dissolve the yeast in some of the liquid, add remaining liquid and most of the flour and work the dough until smooth and pliable. Leave to rise until double in size, about 1 hour. Take it up on a floured Surface and work remaining flour into the dough.
Split in two and shape into loaves. Put them in greased 6-cup bread pans and leave to rise for about 40 minutes. Bake at 390F for about 45 minutes. Brush with melted fat when ready and allow to cool under cloths on a rack.
