Lamb Stew with Onions - Lammgryta med lök

LAMB STEW WITH ONIONS
Lammgryta med lök

Fine pieces of lamb, well browned and mixed with carrots and small onions, is a lovely dinner stew. Sage and garlic go well with lamb.

Serves 4

Approx 1 1/3 lbs boneless, trimmed lamb,
e.g. brisket or shoulder (approx 2 lbs with bone)
3 tablespoons butter or margarine
salt, black pepper
sage, garlic
1 cup bouillon or red wine
12 to 16 really small onions
approx 14 oz baby carrots
chopped parsley


Cut the lamb in large Dice and Brown them pretty well in half of the fat. Transfer the meat to a pot. Flavor with salt, pepper, sage and garlic (either a crushed garlic clove or powderedgarlic). Pour on bouillon or wine, cover with a lid and let simmer slowly on low heat for about 1 hour.

Meanwhile, sauté the onions and carrots in remaining fat. Make sure it's evenly colored all around. Put a lid on the pan and leave on very low heat until the vegetables are tender. 

Alternate meat, onions and carrots in a warm serving pot. Flavor the pan juices to taste and pour it on. Sprinkle with some parsley.
