ALMOND PANCAKES WITH RHUBARB COMPOTE
Mandelpannkakor med rabarberkompott

Serves 2

2 eggs
0.6 cup milk
2 teaspoons psyllium seed husk (hope that's the right translation!)
0.4 cup cream, 15% fat or the like
0.2 cup almond flour
1 tablespoon butter or margarine for frying

Compote:
5½ oz Young rhubarbs
1 tablespoon water
1 tablespoon cane sugar
3½ oz fresh strawberries


Beat eggs, milk, psyllium husk, cream and almond flour to a smooth mixture. Leave to swell for a few minutes. Fry 4 to 6 pancakes on a greased pancake griddle. Melt the trimmed, cut rhubarbs on low heat in a saucepan with water and sugar. Stir in the sliced strawberries and allow to cool.

Serve as a dessert.
