Mushroom Bacon Salad - Champinjonsallad med bacon

MUSHROOM BACON SALAD
Champinjonsallad med bacon

Serves 2

9 oz fresh mushrooms
1½ tablespoons oil
2 teaspoons vinegar
1 finely grated garlic clove
1 teaspoon Dijon-type mustard
0.4 cup chopped parsley
2½ oz bacon


Clean and slice the mushrooms. Mix oil, vinegar, garlic, mustard, salt and pepper. Gently mix with mushrooms and chopped parsley. Fry the bacon in a dry, hot frying pan and drain on a paper towel. 

Serve on a bed of green salad with the mushroom salad and a nice bread.
