Fruit-Filled Pancakes - Pannkakor med fruktfyllning

FRUIT-FILLED PANCAKES
Pannkakor med fruktfyllning

This is a wonderful dessert which definitely will be liked by both grown-ups and children. These thin pancakes are filled with pineapple and berries, like cherries. You top them with a dab of crème fraîche and decorated with brown sugar.

4 to 6 servings

Pancakes:
0.6 cup flour
1 tablespoon sugar
1 cup milk
2 eggs
2 tablespoons butter or oil

Filling:
1 small can candied cherries
1 can crushed pineapple
crème fraîche
brown sugar


Mix flour and sugar and beat in the milk, Little by Little, to a smooth batter. Add the eggs while beating, then add melted butter or oil and bake thin pancakes.

Pour off the cherry liquid and mix the berries with the crushed pineapples. Heat it up in a saucepan on low heat. Spoon the fruit mix onto each pancake and roll them up. Put a dab of crème fraîche on each pancake, sprinkle with brown sugar and serve.
