ONION AND BACON POTATOES
Potatisrätt med bacon och lök

It doesn't take a lot to make the daily potatoes a bit more interesting. You can serve this as it is or together with meat or fish and is originally from Switzerland (which is not Sweden).

Serves 4

2 lbs potatoes, approx 10 middle-sized ones
3½ oz bacon
1 onion
some white pepper
some salt if needed


Peel the potatoes and boil for about 10 minutes. Pour off the water and let the potatoes get cold, then cut it in long pieces. Cut the bacon in pieces and peel and chop the onion. Sizzle the bacon in a dry, hot frying pan, add the onion and let it go with the bacon until golden Brown.

Add potatoes and fry on moderate heat. Gently stir with a spatula and flavor with pepper and salt if needed. When the potatoes are getting golden you flatten it all out with the spatula and fry the potato cake until ready under a lid.

Serve the dish straight from the pan or gently unmould onto a serving plate.
