ENGLISH APPLE MUFFINS
Engelska äppelmuffins
1/3 cup sugar
3½ oz butter or margarine
1 egg
¾ cup milk
1 apple
2 teaspoons ground cinnamon
Mix flour, baking powder and 1/3 cup sugar in a bowl. Cut the fat in pieces and finely divide it into the flour mixture with a fork. Stir in egg and milk. Core the apple and cut in small pieces which you blend into the batter.

English muffins – a little more filling and ”sturdy”
than the Swedish ones – are often served fresh from the oven with tea.
14 to 16 muffins
1 ¾ cups flour
3 tablespoons baking powder1/3 cup sugar
3½ oz butter or margarine
1 egg
¾ cup milk
1 apple
2 teaspoons ground cinnamon
Mix flour, baking powder and 1/3 cup sugar in a bowl. Cut the fat in pieces and finely divide it into the flour mixture with a fork. Stir in egg and milk. Core the apple and cut in small pieces which you blend into the batter.
Fill muffin tins to 2/3 with batter. Mix remaining
sugar with cinnamon and sprinkle it on top. Bake in the middle of the oven at 390F for about 20 minutes until done. Let cool on a rack, then serve and
enjoy!
