FALU SAUSAGE ON A TOMATO BED
Falukorv på tomatbädd
2 tablespoons butter or margarine
1 can sliced mushrooms, 6 oz
salt, pepper
1 can crushed tomatoes, 14 oz
1½ teaspoons dried basil
½ teaspoon salt
black pepper
1 crushed garlic clove
¾ to 1 ¼ cups grated cheese
Cut the sausage in slices. Peel and chop the onion. Melt 1 tablespoon fat in a frying pan and sizzle the drained mushrooms for about 5 minutes. Flavour with salt and pepper. Melt remaining fat in a saucepan and sizzle the onion until tender but NOT coloured.

After the meatballs, the Falu sausage is one of the
most common things on a Swedish dinner table. Here it’s put on a spicy,
garlic-smelling bed of tomatoes.

14 oz to 1 lb Falu sausage
1 onion2 tablespoons butter or margarine

Blend the tomatoes into the saucepan and boil it all
for a few minutes. Flavour with basil, salt, pepper and garlic to taste. Pour
the tomato mix in an oven-proof dish and top with the sausage slices. Sprinkle
with mushrooms and grated cheese and bake in the middle of the oven at 390F for 25 to 30 minutes.
Serve with rice or boiled potatoes and broccoli or a
green salad.
