Falu Sausage au Gratin with Mustard and Sambal Oelek - Smakrik falukorvsgratäng med senap och sambal

FALU SAUSAGE AU GRATIN WITH
MUSTARD AND SAMBAL OELEK
Smakrik falukorvsgratäng med senap
och sambal

Serves 4

1½ lbs Falu sausage, if you can get
hold of it, otherwise you can use any
kind of "boilable" sausage you like,
only it shouldn't be spicy

2 fresh tomatoes
0.8 cup grated strong cheese

Sauce:
0.8 cup regular milk
0.8 cup cream
0.3 cup sweet-pickled gherkin
2 teaspoons French mustard
3 tablespoons chili sauce
1 tablespoon concentrated veal fond
1 tablespoon corn starch, Maizena type
1 teaspoon sambal oelek

For serving:
boiled rice


Preheat oven to 437F.

Slice sausage and tomatoes and alternate them in an oven-proof dish. Blend together the sauce and pour it over the sausage. Sprinkle with the grated cheese and cook in the middle of the oven for about 20 minutes.

Serve with boiled rice.

Minute-Made Sausage Stew - Korvgryta på minuten

MINUTE-MADE SAUSAGE STEW
Korvgryta på minuten

An easy-made sausage stew, particularly liked by the younger members of the family and perfect when you have hungry children waiting for dinner on the table. Fry vegetables together with Falu sausage or the like and blend in a can of white beans in tomato sauce, crushed tomatoes and broccoli florets. Sounds simple, is delicious.

Serves 6

1 shredded red bell pepper
1 large onion, sliced
1 tablespoon butter or margarine
approx 1½ lb Falu sausage, sliced (or use Frankfurter sausage)
1 can white beans in tomato sauce, approx 14 oz
1 can crushed tomatoes, 14 oz to 1 lb
14 oz frozen broccoli florets
1 teaspoon salt
ground black pepper
1 teaspoon dried thyme
chopped parsley


Sauté bell pepper and onion in some fat in a pot. Cut each rather thick sausage slice in 4 parts. Add them to the pot, stir and add beans, crushed tomatoes and broccoli florets (cut them in two if large). Flavor to taste with salt, pepper and thyme. Bring to a boil and boil for about 5 minutes until the broccoli is tender.

Sprinkle with chopped parsley and serve.

Cheese-filled Falu sausage - Ostfylld falukorv

CHEESE-FILLED FALU SAUSAGE

Oven-baked Falu sausage is a Swedish favorite. Here's a different twist, with a creamy garlic cheese that adds extra delicious flavour.

4 servings

1 lb Falu sausage
1 ¼ cups grated cheese
2½ oz garlic cheese (the spreadable type)
5 tablespoons chili sauce
1 can whole tomatoes, 14 oz
1 onion
½ meat bouillon cube
1/3 cup water

You can substitute the garlic cheese with
other spreadable cheese, e.g. chives or
horseradish.

Pull off the skin and make some cuts in the sausage. Put it in an oven-proof dish. Mix ¾ cup grated cheese, garlic cheese and 2 tablespoons chili sauce. Spread the cheese mixture in the cuts and on top of the sausage. Cut the tomatoes in smaller pieces. Peel and split the onion and cut it in thin wedges.

Put tomatoes, tomato juice and onions around the sausage in the pan. Mix bouillon cube, water and remaining chili sauce and pour it over the tomatoes. Sprinkle with remaining cheese and bake in the oven at 440F for 25 to 30 minutes or until the cheese has melted and the sausage is slightly coloured.

Serve and enjoy!

Sausage goulash - Korvgulasch

SAUSAGE GOULASH
Korvgulasch

Put this lovely goulash on the table and let everyone help themselves to it. If you like garlic, flavour it with a couple of garlic cloves.

4 servings

1 lb Falu sausage
1 large red onion
½ green bell pepper
2 tablespoons butter or margarine
1½ tablespoons flour
1 teaspoon dried marjoram
½ teaspoon paprika
black pepper
½ meat bouillon cube
2/3 cup water
2 tablespoons tomato purée or mild
chili sauce
2/3 cup soured cream

Decoration:
chopped parsley

Dice the sausage. Peel and chop the onion. Trim the bell pepper and cut in pieces. Melt the fat in a pot and sizzle onion and pepper for a couple of minutes. Add the sausage and sizzle it all for 3 to 5 minutes. Sprinkle with flour, marjoram, paprika, salt and black pepper. Add the crumbled bouillon cube and blend in water and tomato purée or chili sauce. Simmer slowly for about 10 minutes.

Add the soured cream. Flavour to taste and adjust if necessary. Heat it all up but not boil again. Sprinkle with parsley and serve with potatoes, rice or pasta.

Sausage delight - Korvglädje

SAUSAGE DELIGHT
Korvglädje

Shredded Falu sausage in a cheese sauce is delicious and easy to make. The mild taste makes this dish suitable for everyone.

4 servings

14 oz Falu sausage
1 tablespoon butter or margarine
1 ¼ cups milk
1/3 cup cream, 15% fat
2½ teaspoons Maizena
¼ to ½ chicken bouillon cube
2/3 cup grated cheese
¾ cup frozen peas
salt, pepper

Decoration:
parsley

Thinly shred the sausage. Melt the fat in a saucepan and sizzle the sausage for 3 to 5 minutes. Add milk, cream, Maizena and bouillon cube and boil for 3 to 5 minutes. Add cheese and peas and boil until peas are tender. Flavour to taste with salt and pepper.

Sprinkle with lots of chopped parsley and serve with pasta or rice, bread and a salad.

Falu sausage with onions and mushrooms - Falukorv med lök och svamp

FALU SAUSAGE WITH ONIONS AND MUSHROOMS
Falukorv med lök och svamp

Here’s an easy-made, quick everyday dish with Falu sausage as the main ingredient. The shallots give a hearty, lovely taste.

4 servings

14 oz to 1 lb Falu sausage
6 shallots
3½ oz fresh mushrooms or 1 can, good 6 oz
1 tablespoon butter or margarine
3 tablespoons mustard
¾ cup cream, 15% fat
1/3 cup water
½ meat bouillon cube
¼ cup chopped parsley
½ to 1 teaspoon Italian salad spice
salt, pepper

Decoration:
chopped parsley


Slice the sausage, then cut the slices in half. Peel the onions and trim the mushrooms. Split them if too big. Melt half of the fat in a large frying pan and fry the sausage in two rounds, until coloured and almost done, about 5 minutes. Transfer to a dish and keep warm.

Melt remaining fat and sizzle onions and mushrooms for about 5 minutes. Blend in mustard, cream, water, crumbled bouillon cube and parsley and simmer slowly, covered, for about 5 minutes. Flavour with salad spice and salt and pepper to taste. Add the sausage and simmer it for a few minutes in the sauce.

Sprinkle with parsley and serve with tagliatelle or mashed potatoes and shredded rosé lettuce (maybe you don’t call it that, but it’s those red lettuce leaves).

FALU SAUSAGE ON A TOMATO BED
Falukorv på tomatbädd

After the meatballs, the Falu sausage is one of the most common things on a Swedish dinner table. Here it’s put on a spicy, garlic-smelling bed of tomatoes.

4 servings

14 oz to 1 lb Falu sausage
1 onion
2 tablespoons butter or margarine
1 can sliced mushrooms, 6 oz
salt, pepper
1 can crushed tomatoes, 14 oz
1½ teaspoons dried basil
½ teaspoon salt
black pepper
1 crushed garlic clove
¾ to 1 ¼ cups grated cheese


Cut the sausage in slices. Peel and chop the onion. Melt 1 tablespoon fat in a frying pan and sizzle the drained mushrooms for about 5 minutes. Flavour with salt and pepper. Melt remaining fat in a saucepan and sizzle the onion until tender but NOT coloured.

Blend the tomatoes into the saucepan and boil it all for a few minutes. Flavour with basil, salt, pepper and garlic to taste. Pour the tomato mix in an oven-proof dish and top with the sausage slices. Sprinkle with mushrooms and grated cheese and bake in the middle of the oven at 390F for 25 to 30 minutes.

Serve with rice or boiled potatoes and broccoli or a green salad.

Rich sausage salad - Matig korvsallad

RICH SAUSAGE SALAD
Matig korvsallad

Falu sausage is the ”centerpiece” in this simple, easy-to-make salad. You can of course choose some other sausage with more taste, like salami (but I detest salami myself …).

4 servings

1 lb Falu sausage or some other flavourful sausage
½ to 1 large onion
1 small leek
4 hard-boiled eggs
4 tomatoes
1 piece fresh cucumber
7 oz cheese, good and strong

Dressing:
1 tablespoon vinegar
2 tablespoon mustard
salt
white pepper
2 tablespoons water
1/3 cup oil
pinch sugar

Decoration:         
parsley
chives

Pull off the skin from the sausage and cut it in slices that you then cut in half. Shred onion and leek, slice eggs and tomatoes and cut cucumber and cheese in longer pieces. Put the sliced sausage in the bottom of a suitable serving plate or dish and add onion, leek, eggs and tomatoes and then cucumber and cheese.

Shake vinegar, mustard, salt and pepper and add water and oil. Flavour to taste with a pinch of sugar. Pour the dressing over the salad and leave for a couple of hours in the fridge before serving. Sprinkle with finely chopped parsley and chives and serve the salad.
