FESTIVE BEEF ROULADES

Arrange a dinner party for your friends when winter closes in! What could be better than these delectable beef roulades and a really good red wine? Of course you can cook and eat them any time of the year you want … :-D

4 servings

8 slices really thin slices of beef,
approx 1 1/3 lbs
salt, pepper
3½ to 4 oz garlic cream cheese, e.g. Cantadou
2 large pickled gherkins
1 tablespoons butter or margarine
¾ cup water
¾ cup cream, 15% fat
¾ meat bouillon cube
1 teaspoon Chinese soy sauce
1 teaspoon Maizena or cornflour

Decoration:
parsley

Flavour the meat with salt and pepper. Spread about half of the cheese on the steaks. Cut each gherkin in 4 parts lengthwise and put ¼ gherkin on each slice of meat. Roll them up. Melt the fat in a frying pan and brown the roulades on all sides until coloured.

Lower the heat, cover with a lid and fry for about 15 minutes. Take them up and keep warm. Beat in water, cream, bouillon cube, remaining cheese and soy sauce in the pan. Boil for a few minutes. Stir the Maizena with some water and beat it into the sauce, then boil until it thickens. Flavour to taste with salt and pepper.

Put the roulades in a serving dish and pour on the sauce. Sprinkle with lots of chopped parsley and serve.
