PARTY ”KASSLER” AU GRATIN
Festgratäng med kassler

Baked ”kassler” (warm smoked, cured loin of pork) with mushrooms in a creamy sauce is a given success on the dinner table. A splash of sherry gives the sauce that little extra taste.

4 servings

1 lb boneless “kassler”
½ can creamed mushrooms (good 6 oz for 1 can)
1 can sliced mushrooms, good 6 oz
1 ¼ cups whipping cream
2/3 to ¾ cup chili sauce, mild type
cayenne
powdered chili
1 to 2 tablespoons sherry (optional)


Slice the meat and put them in two rows in an oven-proof dish. Spread with the creamed mushrooms and sprinkle with canned mushrooms. Beat the cream and blend in the chili sauce and spices. Flavour to taste, adjust if necessary and add the optional sherry.

Spread the chili cream over the meat and bake at 350 to 390F to 6 for about 30 minutes.

Serve this delicious dish with boiled or riced potatoes and a salad.
