Yesterday's leftovers - Gott från igår

YESTERDAY’S LEFTOVERS
Gott från igår

A strange name for a dish but this is made from left-over boiled potatoes. A delicious potato gratin which is very quick and easy to make.

4 servings

8 to 10 boiled, cold potatoes
5 oz smoked ham
1/3 cup chopped parsley
1 teaspoon salt
pepper
1 cup cream, 27% fat (or thereabouts)
4 tablespoons chili sauce
3 tablespoons mayonnaise

Decoration:
parsley

Grate the boiled potatoes coarsely or shred them thinly. Cut the ham in pieces. Alternate potatoes, ham, parsley, salt and some pepper in an oven-proof dish. Beat the cream so that it thickens a bit and blend in the chili sauce and mayonnaise. Flavour to taste with salt and pepper.

Dab the cream out on top of the potatoes and bake in the upper part of the oven at 250°C/480F for 10 to 15 minutes. Sprinkle with chopped parsley and serve the gratin with bread, cheese and a salad.

You can substitute the ham with leftover fried or boiled meat or chicken. You can also sprinkle with grated cheese before baking.

Enjoy!
