Citrus meringue pie - Citrusmarängpaj

CITRUS MERINGUE PIE
Citrusmarängpaj

A citrus pie with a sharp filling and a sweet meringue cover – hard to resist! Serve cooled with some whipped cream or ice cream.

1 pie, approx 8 servings

1 cup flour
1 tablespoon sugar
3½ oz butter or margarine

Filling:
2/3 cup sugar
2/3 cup Maizena
2 cups water
2 tablespoons grated orange zest
1 teaspoon grated lemon zest
1 tablespoon butter or margarine
3 egg yolks
4 tablespoons fresh orange juice
4 tablespoons fresh lemon juice

Meringue:
3 egg whites
1/3 cup sugar


Chop together flour, sugar and fat. Quickly work to a dough, roll it out to a round cake and transfer it to a pie pan. Prick the bottom with a fork. Bake in the middle of the oven at 390F for about 15 minutes.

Mix sugar and Maizena in a saucepan. Add water, orange zest and lemon zest, bring to a boil while stirring and then boil until it thickens. Stir in the fat. Beat together the fruit juices in a bowl together with the egg yolks. Gently blend it into the batter and pour it all in the pie shell.

Beat the egg whites until stiff, add sugar and beat until the batter is firm. Spread the meringue over the filling, put back in the oven and bake on the middle shelf at 300F for about 20 minutes.

Allow to cool, serve and enjoy!
