Citruskaka - Citrus cake

CITRUS CAKE
Citruskaka

A real ”Sunday cake”, glazed and decorated with slices of lemon and lime. It tastes lovely and fresh from the citrus.

1 cake, approx 18 slices

1 ¾ cups flour
½ teaspoon baking powder
6 oz butter or margarine
1½ cups sugar
3 eggs
grated zest from 1 lemon
2 tablespoons fresh lemon juice
2/3 cup milk
1/3 cup sliced almonds

Glaze:
1/3 cup fresh lemon juice
¼ cup water
4 tablespoons sugar
1 tablespoon Maizena
grated zest from 1 lemon
1 tablespoon butter or margarine

Decoration:
lemon and lime slices


Mix flour and baking powder in a bowl. Stir fat and sugar until fluffy in another bowl. Blend one egg yolk at a time into the fat, plus lemon zest and juice. Stir in the flour alternating with the milk. Beat the egg whites until stiff and gently turn them into the batter. Add the almonds.

Pour in a greased, breaded oblong baking pan (a bread pan), 6 cups. Bake in the lower part of the oven at 350 to 390F for 50 minutes. Allow to cool in the pan and then get completely cold on a rack.

Glaze:
Mix lemon juice, water, Maizena and lemon zest in a saucepan. Heat on low heat while stirring until it thickens. Beat in the fat, spread the glaze over the cake and allow to cool.
