Baked shellfish rice - Gratinerat skaldjursris

BAKED SHELLFISH RICE
Gratinerat skaldjursris

An easy-made shellfish dish is all that’s needed to make everyone happy around the table. A salad and bread with it and voilà!

4 servings

¾ cup long-grained rice
2 cups water
½ to 1 teaspoon salt

Sauce:
1 ¾ cups milk
1/3 cup cream, 12% fat
1 fish bouillon cube
4 tablespoons Maizena
2 tablespoons chopped dill
saffron
salt, pepper
1 lb un-peeled shrimps or 7 oz peeled
1 can sliced mushrooms, about 6 oz
1 can mussels, about 4 oz
¾ cup green peas
1 cup grated cheese

Decoration:
dill


Boil the rice in salted water according to package instructions.

Sauce:
Mix milk, cream, bouillon cube, Maizena, dill and saffron in a saucepan and boil for a few minutes. Flavour to taste with salt and pepper.

Peel the shrimps. Put the rice in an oven-proof dish and put shrimps, mushrooms, mussels and peas on top. Pour on the sauce and sprinkle with cheese. Bake in the upper part of the oven at 480F for 15 to 20 minutes. Decorate with dill and serve.
