Chicken Meatballs in Curry Sauce - Kycklingköttbullar i currysås

CHICKEN MEATBALLS IN CURRY SAUCE
Kycklingköttbullar i currysås

Serves 4

Meatballs:
1.1 lb ground chicken
1 egg
2 tablespoons potato starch
1 teaspoon salt
some pepper
2 tablespoons butter

Curry sauce:
2 tablespoons butter
1 tablespoon curry
3 tablespoons flour
0.8 cup cream of your choice
1.2 cups water
1 chicken bouillon cube
1 teaspoon mango chutney

For serving:
5 oz streaky bacon
2 spring onions
rice
mango chutney
wok vegetables


Mix ground chicken, egg, potato starch, salt and pepper. Leave to swell for a while. Roll into balls and fry until cooked through in butter in a frying pan. Shred bacon and spring onions and fry them together.

Curry sauce:
Sauté butter and curry in a saucepan. Add flour and blend it in. Dilute with cream and water while stirring. Bring to a boil and add bouillon cube and mango chutney. Simmer the sauce for 3 minutes and flavor to taste with salt and pepper.

Pour the sauce over the chicken meat balls in the frying pan and heat through. Sprinkle with the bacon-onion mixture.

Serve with boiled rice, mango chutney and woked vegetables.

Ground Chicken "Wallenbergers" - Wallenbergare på kycklingfärs

GROUND CHICKEN "WALLENBERGERS"
Wallenbergare på kycklingfärs

"Wallenbergers" is a classic Swedish dish, basically it's patties made from ground veal. Here we use ground chicken instead.

Serves 4

1.1 lb ground chicken
1 teaspoon salt
some ground white pepper
2 egg yolks
0.4 cup heavy cream
2 tablespoons butter

For serving:
lingonberries
mashed potatoes
green peas


Mix the ground chicken (it's important that it is cold) with salt, pepper and egg yolks that you carefully stir into the meat. Add the cream little by little, the batter should be slightly tough, but do not overstir. Shape into 8 patties and fry them in butter over medium heat until cooked through.

Serve with mashed potatoes, lingonberries and green peas.

Ground Chicken Patties with Bean Salad - Kycklingbiffar med bönsallad

GROUND CHICKEN PATTIES WITH BEAN SALAD

Serves 2

½ onion
7 oz ground chicken
1 tablespoon tomato paste
salt, pepper
1 tablespoon potato starch
0.2 cup heavy cream
1 tablespoon butter or margarine

Bean salad:
7 oz canned beans, cannellini type
5 cherry tomatoes
0.2 cup canned, grilled sweet pepper
1 oz arugula
1 tablespoon olive oil
2 teaspoons white wine vinegar
salt, pepper

Basil sauce:
0.4 cup creme fraiche
0.4 cup fresh basil
salt, pepper


Peel and finely chop the onion and mix it with ground chicken, tomato paste, salt, pepper, potato starch and cream. Shape into 4 patties and fry in butter for about 4 minutes on each side.

Bean salad:
Rinse the beans and mix them with split tomatoes, shredded grilled sweet pepper and arugula. Drizzle with oil and vinegar and flavor with salt and pepper.

Sauce:
Mix creme fraiche with chopped basil and flavor with salt and pepper.

Serve the patties with the bean salad and basil sauce.

Chicken Parmesan Patties - Parmesanbiffar

PARMESAN PATTIES
Kycklingfärsbiffar med parmesan

Serves 2

8.8 oz ground chicken
1 egg
½ grated garlic clove
1 tablespoon chopped fresh basil
1 finely chopped sundried tomato
salt, pepper
0.2 cup grated parmesan
½ tablespoon butter or margarine or oil
1 teaspoon olive oil
1 small sliced onion
5.3 oz split Cherry tomatoes


Mix the ground chicken with egg, garlic, basil, sundried tomato and cheese. Shape with moist hands into 4 patties. Fry in some fat for 3 to 4 minutes on each side. Take up and keep warm under aluminum foil.

Add olive oil to the pan and let the  sliced onion get tender without browning. Add tomato and sauté until the tomato is mushy. Add some water if it gets too dry. Put the patties in the tomato sauce.

Serve with boiled bulgur, rice, potatoes or whatever, and boiled green asparagus is smashingly good with this. Or sprouts.
