Chili-Grilled Pork Tenderloin - Chiligrillad karréskiva

CHILI-GRILLED PORK TENDERLOIN
Chiligrillad karréskiva

Serves 4

1 tablespoon soy sauce
1 tablespoon oil
4 slices pork tenderloin, in all approx 1 lb
some powdered chili or 1 teaspoon chili flakes
salt, black pepper

Oven-roasted new potatoes:
2 lbs new potatoes
2 tablespoons oil
1 teaspoon salt
some coarsely ground black pepper
½ teaspoon paprika


Potatoes:
Heat the oven to 435F. Scrub and split the potatoes if they're large. Put them in an oven-proof pan and mix them with oil, salt, pepper and paprika. Cook in the oven until the potatoes are tender and nicely colored, about 35 minutes.

Mix oil and soy sauce and brush the meat with this. Sprinkle with powdered chili or flakes. Grill the meat for about 5 minutes on each side and make sure it's cooked through. Flavor with salt and pepper. 

Serve the sliced meat with the oven-roasted potatoes, small tomatoes and a salad.

TOMATO AND BEER-MARINATED ENTRECÔTE
Tomat- och ölmarinerad entrecôte

Entrecôte is good for barbecue since it normally results in a juicy, delicious meat. The hearty marinade wakes up your tastebuds and is an excellent basic marinade for steak, entrecôte and pork loin, whole or in slices. It can be stored in the fridge for several weeks. You can buy the barbecue sauce bottled in most shops here in Sweden, and I'm sure you can almost everywhere …

Makes approx 2.4 cups marinade

0.8 cup tomato paste
0.4 cup ready-made barbecue sauce
1.2 cups beer, preferably dark
1 large or 2 smaller crushed garlic cloves
2 teaspoons brown sugar or raw sugar
1 tablespoon Worcestershire sauce
1 tablespoon Chinese soy sauce
5 drops tabasco


Mix all ingredients in a can with a tight lid, shake well and leave for 24 hours.

Sliced meat is brushed with marinade and left in peace for about 15 minutes before cooking. Whole meat is brushed with the marinade during the last 15 minutes of the cooking time.


4 slices entrecôte, approx 5½ oz each
approx 0.4 cup of the marinade
extra salt and pepper if necessary

For serving:
split grilled tomatoes, brushed with the same marinade


Start the grill, or light it or whatever … :-D Put the meat in a suitable pan and brush with the marinade. Turn the meat now and then while they're sucking up the marinade. When it's time, wipe off the meat and put them on an oiled rack about 4 inches above the embers. Grill for as long as you prefer, 1 to 3 minutes on each side, and brush meanwhile. Also brush the tomatoes and cook them until heated through.

Grilled meat skewers is nice food both in the summer and in the winter. I have a friend who is so obsessed with barbecue that she does it even in the coldest and darkest nights of winter, using a head light and looking like a maniac! She's wonderful! ("Mamma Mia", if you ever read this - I love you!)

4 servings

1 to 1 1/3 lbs boneless beef, e.g.
fillet or roast beef
16 middle-sized mushrooms
4 slices bacon
1 large red onion

Marinade:
1/3 cup chopped spring onions or leek
1 crushed garlic clove
4 tablespoons Chinese soy sauce
3 tablespoons oil
1/3 cup meat bouillon
1 tablespoon white wine vinegar
cayenne

Cut the meat in even-sized cubes and put them in a dish. Blend together the ingredients for the marinade and pour it over the meat. Add half of the mushrooms. Cover the pan and marinate meat and mushrooms in the fridge for about 3 hours, or preferably overnight.

Cut the bacon in half and wrap a piece of bacon around each remaining mushroom. Peel the onion and cut it in wedges. If need be, you can boil the wedges in some water for a few minutes until tender. Drain well.

Alternate meat, mushrooms and onion on skewers, which you put in a roasting pan or an oven-proof dish. Brush with the marinade and grill the skewers rather large up in the oven for 4 to 8 minutes. Turn them occasionally and brush with the marinade.

Serve with e.g. rice pilav, broccoli and a green salad with cherry tomatoes.

Fish skewers - Fiskspett Special

The slightly unusual combo of honey, soy sauce and lemon gives these fish skewers a delicious taste. Don’t grill them for too long, or they might turn dry and disagreeable.

4 servings

14 oz to 1 lb fillet of salmon, halibut or other firm fish
4 slices bacon
1 green bell pepper
8 mushrooms
8 cherry tomatoes

Honey sauce:
1/3 cup honey
4 tablespoons butter or margarine
2 tablespoons Chinese soy sauce
1 to 2 tablespoons fresh lemon juice
1 tablespoon chopped parsley
white pepper

Cut the fish in cubes, about 2 ¼ inches. Cut each slice of bacon in 4 pieces. Cut the sweet pepper in pieces and the mushrooms in thick slices.

Mix the ingredients for the sauce in a small saucepan. Heat while stirring on medium heat for about 3 minutes. Alternate fish, bacon, sweet pepper, mushrooms and tomatoes on skewers. Put them in a dish, pour the honey sauce over them and leave for about 30 minutes. Turn the skewers after half the time.

Grill the skewers rather high up in the oven for 3 to 5 minutes. Turn them and brush with the sauce, then grill for another 5 minutes or so until done.

Serve and enjoy, perhaps with rice mixed with green peas and dill, a salad and warm bread.

FINE GRILLED CHICKEN

Chicken thighs become crunchy and delicious if they’re brushed with a spicy sauce while they’re grilled in the oven. Serve with a tossed salad and baguette.

4 servings

Approx 2 lbs chicken thighs

Marinade and grill sauce:
1/3 cup mild chili sauce
¼ cup vinegar
¼ cup cooking oil
2 tablespoons brown sugar
2 tablespoons strong mustard
2 tablespoons fresh lemon juice
1 teaspoon dried basil
salt
black pepper
2 crushed garlic cloves

Stir together the ingredients for the marinade. Put the chicken in a bowl and pour the marinade over them. Marinate in room temperature for at least 1 hour. Take up the meat and save the marinade.

Put the chicken in an oven-proof dish or on a grill rack and brush them with the marinade. Grill the chicken about 2 to 4 inches from the heat for about 20 minutes or until the chicken is done. Turn occasionally and brush with the marinade.

Serve with accompaniments of your choice.

DELECTABLE MEAT SKEWERS

A tender piece of beef is excellent to put on a skewer. The meat gets even more tender if you leave it in the marinade for a long time, preferably overnight.

4 servings

15 oz entrecote or fillet of beef
16 mushrooms
16 small onions
8 cherry tomatoes

Marinade:
¼ cup sesame seeds
1 onion
1/3 cup Chinese soy sauce
5 tablespoons oil
1 tablespoon sugar
1 crushed garlic clove
black pepper

Cut the meat in suitable cubes and put it in a bowl.

Marinade:
Roast the sesame seeds in a dry frying pan until coloured, approx 5 minutes. Peel and finely chop the onion. Mix all ingredients for the marinade and pour it over the meat, then marinate in the fridge for at least 2 hours or overnight.

Trim the mushrooms and peel the onion. Pre-cook the onions for a few minutes. Take up the meat and make the skewers with meat, mushrooms and onions. Baste with the marinade and grill in the upper part of the oven for 4 to 10 minutes depending on how you like your meat. Place the tomatoes on the skewers shortly before the meat is done, then baste again and continue grilling until the meat is done. Serve with baked potatoes and a salad, or something else that you like!
