Fresh Onion Stew - Färsk lökstuvning

FRESH ONION STEW
Färsk lökstuvning

When those endearing bundles of fresh, small, shiny onions are being sold, you can make this onion stew. Serve it with toast or as an accompaniment to a slice of fried meat, or whatever you prefer.

Serves 4

1 bunch fresh onions, (4 to 5)
1 tablespoon butter or margarine
0.4 to 0.6 cup dry white wine
0.6 cup heavy cream
salt


Slice the onion and sautée in the fat. Add wine and let that boil in. Dilute with cream, bring to a simmer so that it thickens. Flavor to taste with salt. The onion is done when it is tender and the sauce is well thickened.

Bean Almond Dip - Bön- och mandeldip

BEAN ALMOND DIP
Bön- och mandeldip

You can use this as a dip or spread it on bread. It's delicious any which way.

Serves 4

1 can white beans (without tomato sauce), approx 14 oz
1 to 2 garlic cloves
1 to 2 tablespoons oil, preferably olive oil
½ lemon
0.4 cup plain yogurt
1.7 oz skinned almonds
roasted flaked almonds for decoration


Put the beans in a mixer or food processor and mix them with garlic, oil, lemon juice and skinned almonds until you have a rough dip. Dilute with some lukewarm water if needed. 

Pour into a bowl, decorate with flaked almonds and serve with vegetables of your choice (or spread it on bread, or do both!).

Broccoli with Garlic, Chili and White Wine - Broccoli med vitlök, chili och vitt vin

BROCCOLI WITH GARLIC, CHILI
AND WHITE WINE
Broccoli med vitlök, chili och vitt vin

This is good with grilled fish, and you can spoon some of the juices over the fish. You can also stir it into freshly boiled pasta.

Serves 4

1 broccoli, 8.8 oz
½ tablespoon oil
1 red, finely sliced chili
4 finely sliced garlic cloves
0.4 cup white wine
salt


Split the broccoli into florets and sizzle in oil on medium heat in a frying pan for a few seconds. Add chili, garlic and wine and let it boil until dried up, about 3 minutes. The broccoli should still be "al dente". Flavor to taste with salt.

Antonio's Spaghetti Speziale - Antonios Spaghetti Special (retro)

Antonios Spaghetti Special

This was made now and then when I was about 10 years old (1974). It was good and somehow felt hearty and wholesome, and I have taken it up on the menu again to recall some childhood memories.

For each serving you take 2 slices salty pork, 2 tablespoons finely chopped onion and 2 to 3 tablespoons grated cheese, preferably parmesan. Shred the pork and fry until crisp, add the onion and a Little extra butter or margarine. Flavor with pepper and melt it all together.

Mix it into freshly boiled and very well drained pasta together with cheese and serve with a salad.

Spaghetti from Trapani - Spaghetti från Trapani

SPAGHETTI FROM TRAPANI
Spaghetti från Trapani

Pesto from Trapani in Sicily contains, among other things, almonds, basil, tomatoes and olive oil. This spaghetti dish has all of it.

Serves 4

14 oz spaghetti
2 lbs tomatoes
0.4 cup almonds
1 bunch fresh basil
2 to 3 garlic cloves
½ small red chili fruit
or a little powdered chili
0.3 cup olive oil
1 teaspoon sugar
1 teaspoon salt
a little black pepper

For serving:
3½ oz grated pecorino cheese
black olives
bread


Scald, skin and remove the seeds from the tomatoes if you feel that you must. Dice the pulp. Scald and peel the almonds. Mix almonds, basil, peeled garlic and seedless chili in a food processor until finely mixed. Add olive oil, sugar, salt and black pepper. 

Boil the pasta. Mix it freshly boiled with the pesto and tomatoes. Sprinkle with pecorino and olives and serve with bread.

Creamy Roast Beef Pasta - Krämig rostbiffspasta

CREAMY ROAST BEEF PASTA
Krämig rostbiffspasta

A Quick and easy dish that only takes around 10 minutes to make. Leftover roast beef and fresh pasta with a creamy sauce of grilled bell pepper and crème fraîche.

Serves 4

9 oz leftover roast beef, sliced thinly
5 oz fresh sugar peas
1 lb fresh tagliatelle
1 can grilled bell pepper, 7 oz
0.8 cup crème fraîche
½ teaspoon + ½ teaspoon salt
some freshly ground black pepper


Shred the meat. Trim and shred the sugar pea pods. Boil the pasta. Drain the bell pepper but save 2 tablespoons of the oil. Mix peppers and crème fraîche and flavor to taste with ½ teaspoon salt and some black pepper.

Fry roast beef and sugar peas in the reserved oil. Flavor with ½ teaspoon salt and some black pepper. Drain the pasta and mix it with the bell pepper sauce. Divide on serving plates and top with the meat mixture.

Broccoli Soup with Ham - Broccolisoppa med skinka

BROCCOLI SOUP WITH HAM 
Broccolisoppa med skinka

Serves 4 to 6

Olive oil
3½ oz shredded ham
2 chopped onions
1 crushed garlic clove
1 lb broccoli (the stems finely chopped,
the florets coarsely chopped)
grated nutmeg
2.4 cups chicken bouillon
½ cup crème fraîche
salt, pepper


Heat the oil on medium heat in a saucepan. Add the ham and sizzle while stirring until slightly colored. Save some shreds for decoration. Add onions and garlic and lower the heat. Sautée for about 10 minutes until the onion is tender. Add broccoli stems and nutmeg and pour in enough bouillon to cover. Bring to a boil and simmer for 10 minutes or until the broccoli is tender.

Add the broccoli florets, cover with a lid and simmer for 8 to 10 minutes until the florets are tender but still nice and green. Remove saucepan from heat, add crème fraîche and mix to a smooth soup with a hand mixer or in a food processor. Flavor to taste with salt and pepper.

Pour into soup Bowls and serve with the reserved shredded ham, crème fraîche, olive oil and bread.
