Spaghetti from Trapani - Spaghetti från Trapani

SPAGHETTI FROM TRAPANI
Spaghetti från Trapani

Pesto from Trapani in Sicily contains, among other things, almonds, basil, tomatoes and olive oil. This spaghetti dish has all of it.

Serves 4

14 oz spaghetti
2 lbs tomatoes
0.4 cup almonds
1 bunch fresh basil
2 to 3 garlic cloves
½ small red chili fruit
or a little powdered chili
0.3 cup olive oil
1 teaspoon sugar
1 teaspoon salt
a little black pepper

For serving:
3½ oz grated pecorino cheese
black olives
bread


Scald, skin and remove the seeds from the tomatoes if you feel that you must. Dice the pulp. Scald and peel the almonds. Mix almonds, basil, peeled garlic and seedless chili in a food processor until finely mixed. Add olive oil, sugar, salt and black pepper. 

Boil the pasta. Mix it freshly boiled with the pesto and tomatoes. Sprinkle with pecorino and olives and serve with bread.
