Creamy Potato Salad with Dill and Bacon - Krämig potatissallad med dill och bacon

CREAMY POTATO SALAD WITH
DILL AND BACON
Krämig potatissallad med dill och bacon

This salad is good in itself, but you can also very well serve it with chicken. It's absolutely delicious!

Serves 4

½ lb boiled potatoes, cold, preferably small ones
approx 5 oz streaky bacon
1 to 2 hard-boiled eggs
½ leek
1.5 cup soured cream
0.4 cup mayonnaise
0.2 cup chopped dill
salt, pepper


Cut the bacon in pieces and fry until crisp, then transfer to a paper towel. Peel and mash or finely dice the eggs. Rinse and finely shred the leek.

Mix soured cream, mayonnaise, dill and leek, add the potatoes and stir gently and flavor to taste with salt and pepper. Put in a serving bowl or on a serving plate and sprinkle with the eggs, crispy bacon and more greenery if desired.
